I did not realize that Asian knives had a different sharpening angle until I went purchased a partuko knife by Chicago Cutlery. I have purchased several of their knives since and am quite pleased with them. While shopping i learned that there was a difference in Asian and European knives. I then went hunting for a knife sharpener. This one was recommended by the folks at Chicago Cutlery. Well. It is easy to use, but there is a design flaw. It is impossible to pull the knife across the sharpener without catching the tip of the knife on the plastic housing just below the sharpening edge. My western sharpener has the housing designed so that it falls away under the sharpening steel. I feel like I am dulling the tip on my Asian style knives after each swipe at sharpening. It sharpens well enough for the rest of the blade, but I do notice the duller tip when slicing and have to work around it.

Works equally well for right or left handers.Being left-handed I usually have to battle with devices like this. Not this one! It’s obviously made to work ambidextrously. That means you can use either hand. And it sharpens our knives. My wife Has had a set of Wüsthof knives for over 30 years and does not trust them to just any device. The fact that this is a Wuesthoff endorsed product made her give it a go and she is pleased with the results. A couple runs through the fine then the usual steel treatment and we have super sharp knives once again thank you.
